Launched in 2015, Capay Mills’ vision is to reacquaint bakers with the forgotten flavors of freshly milled flour made from local heritage wheat and grain. We procure or contract all of our grain (and grow out about 25% ourselves) from family farmers in California’s Northern Sacramento Valley who follow sustainable practices aimed at preserving the genetic diversity of their grain supply. And we use our Partisani Italian stone mill to produce small batches, made to order. Our mission is to grow new markets for sustainably grown varietal flour, and restore grain as a cornerstone of local farming practices.
